Chef Bill Morrison will cover two topics in this class: "The Art of Sauté" and "Crepe Making, Elegant Staple". The first week you will learn the essential method in French Country Cooking as well as Bistro Cooking. You will also work on vegetable preparation for sauté and how to create a pan sauce with this versatile routing. A simple chicken breast sauteed with mushroom can be a gourmet meal. The second week you'll learn about the versatility of crepes, whether they be savory or sweet or used with just a cheese sauce. The ingredients and tools are very rudimentary but the results can be elegant, lovely, and delicious.

$20 materials (food) fee is included in the cost of the class.

Homestyle Japanese Cuisine W18

Chef Bill Morrison will give two lessons on Japanese Cuisine: Noodle in Broth and Teriyaki Technique. In the first class you will learn a great and quick way to make a warm and enriching meal. Noodles such as udon and soba are the heart of the dish, but the broth is what gives it character. For the second class you'll learn about teriyaki, the Japanese version of our barbecue. Using beef, chicken, or seafood, you'll learn how to create a teriyaki sauce that is great for your regular dinner routine. And you'll never have to buy teriyaki sauce again!

There is a $20 materials fee included in the cost of the class.

Maki Sushi: Sushi is Rice; Rice is Sushi W 18

Chef Bill Morrison will start from the beginning when it comes to cooking rice including how to cool and season rice to make the perfect rice for learning the art of sushi. After cooking the rice you will learn how to make two basic rolls: Maki and Inside-Out. In the second class you will learn the art of cutting vegetables and prepping them for Maki Rolls. You will also prepare sauces for the roll and explore the classic Japanese rolls that are the foundation of Sushi. The final week is all about Pirate Sushi. This is a time to experiment and create some "American" sushi rolls. You are invited to bring some ingredients from home to use as well!

A $30 Materials (food) fee is already included in the cost of the class.
